Kale Chane Ki Tikki Recipe

- 3 cups Boiled black grams (Kale Chane)
- 2-3 medium size boiled potatoes
- 2 medium size chopped onions
- 1 pinch Asafoetida (Hing)
- 100 gms Fresh paneer (Cottage Cheese)
- 1 tbsp ginger-garlic paste
- 5-6 no.s Chopped Green chillies
- ¼ cup Chopped Corriander leaves
- 1 tbsp Homemade garam masala - 4 Cloves, 1 tsp Jeera ( Cumin), 1 tsp whole Coriander seeds, Nutmeg, dalchini (Cinnamon), 2 Bay Leaves ( Tej Patta)- Roast all together & ground it.
- 2 tbsp Oil / Ghee for Shallow fry
- Salt to taste
Ingredient for Dip or sides accompaniment
- 1 medium Tomato
- 2-3 no.s Green Chilies
- 6-7 no.s Garlic Cloves
- 1 Cup Mint leaves
- ½ cup Coriander leaves
- 4-5 pieces Brahmi Leaves
- 1 tsp Lime juice
- Salt to taste
Instructions
- Soak the Black gram for 6 to 8 hrs and then pressure cook them. Transfer it to a bowl once boiled.
- Transfer the Black Gram to a blending jar and make a thick paste.
- Add Mash Potato, Paneer, Chopped corriander, Salt with Black gram thick paste.
- Heat 1 Tbsp oil in a pan and add finely chopped Onion, Ginger Garlic paste, Chopped green Chilli, and stir them for few seconds.
- Add a pinch of hing, Garam Masala, red chili powder, and crushed elaichi, and a very little salt. Stir them till the onion turn light brown and spices start releasing aroma.
- Add the mixture and to the pan and cook for 5 to 7 mix till the Black gram paste get blend with the spices.
- Remove the mixture and let them cool.
- Add chopped coriander and mix it well with the kebab mixture. Start taking a small portion from the mixture and roll them into balls and press gently with your palms to give shape. Keep these uncooked kebabs on the side.
- Heat oil or ghee in a pan and shallow fry these kebab on medium to slow flame from both the side till they are crispy and golden brown.
- Serve the Tikki / Kebab with Dip or accompaniments. Kebab may be served with Green Chutney, Curd Dip or a mix of chopped tangy herbs
Direction to make Dip / Side accompaniment
- Mix all the dip ingredients in a chopper and chop it very finely. Transfer it to a bowl and it is ready to serve.
