Pumpkin Burfi (Kaddu Ki Burfi)
We make every possible dish from Sabzi to Sweets from pumpkin. Pumpkins comes under thefamily of fruits. This is easy to make & delicious to taste.

- 500 gms Pumpkin
- 1 tsp Cardamom (elaichi)
- ½ cup sugar
- 100 gms Khoya (Mawa)
- ½ cup Milk
- 2 tbsp Clarified butter (Desi Ghee)
- 1 tbsp Crushed Cashewnut
Take out seeds from the pumpkin ,peel & wash it.
Grate pumpkin & keep it aside.
Put ghee in a pan and add grated pumpkin intothe pan. Cook it on medium flame till it get tender.
Now add Milk & cook it till milk dries up.
Add Sugar and Mawa . Keep on stirring themixture, so it doesn’t get stick at the bottom.
Cook it till it get thick. ( To check the rightconsistency – take little halwa in your fingers , if it is sticking to yourfinger & start to set onto it, then its time to turn off the flame.
Take a flat plate & grease it. Pour the mixture into it, spread it eventually in all direction & Keep it in freeze to set, for 2 hours.
Cut it in a square shape.
Now the Pumpkin burfi is ready & garnish it with grated cashew and serve it.
