History of Mithai

Sugarcane has been grown in the Indian subcontinent for thousands of years. The art of refining sugarcane was invented around 6000 BCE. Jaggery was the first sugarcane derivative used as a sweetener in the Indian subcontinent known as Sharkara. Earlier that honey was used as a sweetening agent.

Rigveda- the earliest collection of Vedic Sanskrit hymns mentioned sweet cake Apupa – made of barley flour, fried in ghee(clarified butter) & dipped in honey. In today’s world, it is known by name as Malpua – which is made of refined flour or whole wheat flour. By the Gupta dynasty era (300 CE-500CE) sugar was not only made of sugarcane but also from other plant sources such as palm, mahua & barley. Sugar-based food was also used in temples as prasad for thousands of years.

The Manasollasa is an early text composed by Kalyani Chalunkya king Someshara III – Ruled South India in the 12th Century. This encyclopedic work covered almost all the topics including food. The recipes include the king’s favorite sweets like Golamu, Pantua & Gharika. This text also mentioned numerous milk-derived sweets.
