I had happy recollections of anticipating Eid, so I could eat my mother’s delicious recipe, Sheer khurma and receive Eidi (cash gifts distributed on Eid). The joyous ambience of Eid is complemented by a wide variety of delectable foods that are delightful to the palate. Eid-Ul-Fitr is a time for eating and rejoicing after a month of extremely severe fasting during Ramzan, with sheer khurma playing a crucial role in the celebrations.

History

This Mughlai dessert has a significant place in the Muslim holiday of Eid-Ul-Fitr. This Persian word comes from the terms Sheer, which means milk, and khurma, which means dates. Originally this dessert was made of Dates & Milk & brought by Mughals in India. Indian cooks modified this by adding- Vermicelli, milk, sugar, and a generous amount of nuts and got famous. In Afghanistan, various Central Asian nations, and the Indian subcontinent, Sheer Khurma is a must for Eid celebrations.

As we mentioned above, this dish was first introduced by the Mughals. During the month of Ramadan, this delightful dessert was prepared for the Mughal emperors and members of their royal court. Over time, it gained popularity among regular people as well. Nowadays, it is the staple of the Eid-Ul-Fitr celebrations and is a favourite across all age groups.

In addition to having a delectable flavour, sheer khurma has religious and cultural significance. The dish sweetness represents the satisfaction of breaking the month-long Ramadan fast, and the vermicelli and nuts stand in for fortune and prosperity.

Best Sheer Khurma Recipe

Ingredients
  

  • 1 liter Milk
  • 1 cup Thin Vermicelli
  • 4 tbsp Sugar
  • 8 numbers Dates
  • 20 Pieces Almonds (Roughly Chopped)
  • 20 pieces Pistachios (Roughly Chopped)
  • 2 tbsp Chironji seeds (Cuddapah almond)
  • 3 tbsp Ghee (Clarified Butter)
  • ½ tsp Cardamom powder
  • 10-15 Strands Saffron (Optional)

Instructions
 

  • First, soak the saffron strands in 2-3 tbsp of milk and keep it aside.

  • Add some ghee to a pan. Once the ghee is hot, add roughly chopped almonds, cashew, pistachios, and Chironji. Fry for 2-3 mins on low flame until light golden brown. Remove it on a plate. (Note- keep stirring properly while frying because the nuts get burned in just a few seconds.)

  • Add 1 tbsp ghee to a pan, and add crushed vermicelli. Fry them on medium heat until it turns golden brown. Keep stirring constantly, while frying to avoid them from burning. Remove it on a plate. (Note- If you are using pre-roasted Vermicelli, then fry only for 40-50 sec, or there is a chance that it can burn. Use very thin Vermicelli for sheer khurma.)

  • Add 1 Liter of milk, cardamom powder, sugar, and Chowara (dried dates) to the pot and cook it on a medium flame for 20 mins so that the flavour and the colour of the Chowara get mixed properly in the milk, keep stirring the milk while cooking.

  • As the colour of the milk turns slightly brown, add the roasted Vermicelli, roasted dry fruits, and saffron. Cook it again for 10 mins, till the vermicelli is softened & the sheer khurma turns slightly thick.

  • This delightful dessert is ready to be served. You can serve hot or chill, as per your preference.
